When giving my 3.0L V6 a fair bit of throttle and cold I’ve noticed that occasionally it ‘slips’ going from second to third. By slip I mean overevs before dropping down. AT fluid all new and looks good. Is this just because still cold or a sign of something more serious with the gearbox?

Probably needs a "Band" adjusting.

Ahh, what did I say  Question  - Auto gearboxes have Bands & some also have clutches.

The bands lock gears sequentially, when a band gets slack, it takes a fraction longer to "Lock up" the previous gear.
Therefore one may notice the "Slip" when the gears change.

Then there is the Torque Converter, many have a "Lock" -
Should the lock not function correctly, may also give the impression of "Slip"
To my knowledge, the TC Lock only engages when in "Top Gear"

Please note: I am not an Auto Gearbox expert. What I write is just a brief explanation.

To make your gear clutches/brake bands last a bit longer, once it is up to a good speed fo changing up, ease off the throttle slightly, and the gearbox will change up with less power going through  as the clutches/bands do their thing. once fully engaged in the next gear, THEN re-apply the accelerator. Otherwise, like doing racing changes on a manual, where you don't ease off the accelerator as you dip the clutch and change up, you can expect increased wear.

Thanks a lot for the advice - I have been more careful on the throttle particularly when cold since I noticed the 'slip' and this has helped a lot. If I notice it getting much worse I'll try and get a gearbox service to adjust the clutches/bands.
