So after much pondering I went for:
Michelin Latitude Cross 112H M+S
265/70x16

Why?
Well the pig does about 90% road; 4% off-road; 3% fields; 2% snow; 1% call someone with propper mudders and a winch
I also wanted something with a bit more wet grip and a little less noise and possibly lower rolling resistance. But could still do a bit more than a road tyre.

So these seem to to fit that compromise
Labelled as:
Rolling resistance/fuel C
Wet grip C
Noise  71 dB
Most off-road tyres are Es or Fs and 74/75dB

So far they work well in the rain for a tail happy, cart sprung, rear drive van and they do seem quite a lot quieter on the road.
Not tried mud or snow, but I have 4x4 rescue on speed dial ;-) I'll let you all know.

The co-driver has taken the pig off down to Glastonbury to get her spot in FMS so we'll see if she manages to get back out of the mud in a week or so once the full river of festival mud has flowed :-)
